At the heart of Burgundy's prestigious vineyards, the Domaine de Rymska owed it to itself to propose an outstanding œnological experience. With 750 references and twice as many undergoing aging, Raphaël Meyer and his two sommeliers thus take care of a remarkable cellar comprised of superb rare vintages to be tasted at the height of maturity. "Our policy is to serve only those bottles that have had the time necessary for aging and are ready for appreciation," explains Raphaël Meyer. "It's what distinguishes us from other addresses. We are currently proposing Côtes de Beaune or Côtes de Nuit from 2017, or going back to the end of the 90's. As for more recent wines, they stay in the cellar."
Filled 80 % with Burgundy wines, this cellar sets fans dreaming: Pommard, Montceau, Corton-Charlemagne, Gevrey-Chambertin, Nuits-Saint-Georges, Romanée-Conti. They can also revel in Chateauneuf-du-Pape from the Rhône valley and, for white wines, Sancerre or Pouilly-Fumé from the Loire Valley, not forgetting Riesling from Alsace. Last but not least, fans of champagne will be spoilt by a wonderful selection of great labels: Laurent-Perrier, Roederer, Ruinart etc. And, of course, wine by the glass is always possible, along with pairing of wines and dishes "à la carte", accompanied by the sommelier.
